Two things about the local situation shaped the drink permanently. The first is the bean: the highlands around Buôn Ma Thuột in Đắk Lắk province turned out to suit robusta far better than the more delicate arabica, and Vietnam went on to become the world's dominant robusta producer and one of the largest coffee exporters of any kind. Fresh dairy was scarce and did not survive the heat, but tinned sweetened condensed milk kept indefinitely on a shelf, and it did the job of sugar and milk at once. That practical substitution became the taste people actually wanted, and it stuck long after refrigeration became normal.
