This is El Salvador's national dish and its national evening meal, cooked to order at pupuserías that only open once the sun drops.","Pupusas are old. Archaeologists working at Joya de Cerén, the farming village buried by volcanic ash around the sixth century and now a UNESCO site, found griddles and food remains that point to filled masa cakes being made in this part of Central America long before the Spanish arrived, and the word itself comes from Nahuat-Pipil.
