In September and October families buy peppers by the crate — thirty, fifty, a hundred kilos — and set up outside: a metal plate over a fire or a gas ring, someone turning peppers, someone peeling into a bucket, children conscripted for the tedious parts, and a wide pot that has to be stirred more or less continuously for two or three hours.
