Soparnik belongs to that specific patch of land and its households, and the connection is close enough that the pie is protected under the name Poljički soparnik, with the recipe and the method treated as heritage rather than as a chef's property. It has also long been women's work — traditionally made by hand on a wooden board, baked on the komin, the open hearth of the old stone kitchens, and sold at village fairs by the women who made it.\n\nIts leanness is not an accident of poverty alone. Soparnik is fasting food, and its complete absence of animal products is the reason it appears at Christmas Eve and during Lent, when Dalmatian Catholic households cooked without meat, dairy or eggs. Chard grows through the mild coastal winter, olive oil was the fat on hand, and the flour-and-water dough required nothing that had to be bought.
